Chocolatey Nice Cream Sandwiches
These deliciously creamy sandwiches are dairy-free and use 3 simple food items from your kitchen: Chocolate Much Better Butter, frozen bananas, and graham crackers. Add sliced strawberries for a more festive sandwich. A thumbs up treat the kids love to eat!
Ingredients
2 ripe bananas, cut into ½” slices
½ cup Chocolate Much Better Butter™
20 graham crackers (ours are 2 ¼” square)
Additions
8 strawberries, sliced thinly
Instructions
Place sliced banana slices on a small baking pan lined with parchment paper and freeze for 1 hour. Make sure they are frozen solid.
Place sunflower butter and frozen banana slices in a strong food processor and blend until smooth.
Spread the creamy mixture onto one graham cracker and place a second cracker on top to complete the sandwich. Makes a total of 10 mini sandwiches. To make the sandwiches more festive, top chocolate mixture with 3-4 slices of strawberries before applying the second cracker. Feel free to freeze strawberries with banana slices.
Place the sandwiches back on your baking pan and freeze for 1 hour. Make sure the middle is frozen before serving.
If you have any leftovers, store in a sealed container in your freezer.
